FIRST TRICK... MAKE SURE THEY ARE COOL TO THE TOUCH...LOL
That's the toughest part of the job... I highly recommend that if they are on an older bike with some miles, that you spray the joints down with WD40 or penetrating oil beforehand. Then it's pretty straightforward... remove heat shields... loosen clamps... start wiggling them off.
PS> it's easier to do if you remove the plastic along the bottom of the bike under the bags, but no need to remove the bags.
