I have a 2012 Hammer with the AMS fuel controller with Hacker rippers. The question is.. If i would disconnect the O2 sensors do i still need to connect the AMS with the O2 sensor connector that goes to the bike itself or can i just roll that section of wire up and tuck it away?

What does the AMS instruction tell you. If they say connect the AMS to the 02's then yes you leave them a lone and connect to them.
I'm guessing that AMS wants you to use your 02's

It says better performance without the O2 sensors connected. Which I disconnected But Im not sure if I need to keep the AMS connected to the plug that the O2's originally plugged into.

Nope, no need to.
