WOW I cant say I have ever seen anything street driven get that hot. I would say way lean. Now that being said, I dont know how the ECM is letting the engine run. Unless.... you have a fuel controller on it. Then I would say your program is off. Are the CAT's still installed?
Yes both of the cats are still installed, it has the factory exhaust pipes and O2 sensors. No piggyback or fuel controller, all stock.

Man like I said, I am very suprised the ecm will even let it run that lean. So for a test disconnect the O2 sensors and see if it still runs that way. Typically if they are disconnected it forces the ecm to run fat Asa default.
I'll try to disconnect the O2 sensors today to see if there is any difference. I'm willing to bet it will force the computer to stay in open loop mode and throw a code. Should be able to tell right away if the check engine light illuminates. Will keep you posted.

The problem started recently when the weather started getting cold. I'm wondering if it has something to do with one of the sensors giving a false reading. Perhaps something simple like a Coolant or intake air temp sensor.

Lately I haven't seen the coolant temperature reach above 178°F according to the display, it normally runs much hotter. Before when the weather was warmer I would notice the cooling fans turn on at idle after warming up or at a stop light while not in motion.

Does colder air require more fuel or less?

You would think that colder air is dense and require a lot less fuel to detonate.
